Act Thirty-Eight: Make dinner for a neighbor in need

When I was hunting for ideas to honor my Mom, my friend Sue suggested making dinner for a neighbor in need.  One of my neighbors recently lost her father, so I decided to make her dinner.  While Sue is one of the best cooks I know, I am not.  I turned to one of Sue’s favorite cooking blogs (minimalistbaker.com) and made some “Spicy Black Bean, Green Chili & Manchego Enchiladas.”  I never found the manchego cheese (a type of sheep’s milk cheese), but they turned out fine with a little bit of cheddar.  My neighbor enjoyed the enchiladas, and I enjoyed making her dinner in honor of my Mom.
